1. Creamy avocado smoothie (lactose and gluten-free, vegan)

  • 1 ripe mango
  • ½ ripe avocado
  • 200 ml coconut water
  • 1 handful of ice cubes
  • 1 handful of spinach
  • Juice of a lime

Mix all ingredients in a blender until creamy. Enjoy immediately!

2. Avocado ice cream recipe (lactose and gluten-free, vegan)

  • 1 ripe avocado
  • 1 can of organic coconut milk (store in the refrigerator overnight)
  • 70 g cocoa powder
  • 150 g maple syrup
  • 1 teaspoon ground vanilla
  • 1 pinch of sea salt
  • 2 tbsp liquid

Take the coconut cream out of the can and put it in a blender. Mix with the avocado and syrup. Add the cocoa powder, vanilla, salt, and possibly some coconut water from the can to the mixer and mix again vigorously. Process further with an ice maker or freeze in a freezer for 3 hours. Take out every 30 minutes and stir well.

3. Recipe for avocado soup (lactose-free, vegan)

  • 1 onion
  • 1 ripe avocado
  • 2 potatoes
  • 1 tbsp olive oil
  • 400 ml vegetable stock
  • Juice of half a lemon
  • Salt pepper
  • Fresh parsley

Prepare the vegetable stock.

Peel and finely dice the onion. Heat olive oil in a saucepan and sauté the cubes until translucent. Cut the pulp of the avocado and the potatoes into large pieces and add to the saucepan with the vegetable stock. Bring to a boil once, then simmer for 15 minutes. Then puree the soup with the hand blender—finally, season with salt, pepper, and lemon juice. Pour soup into bowls, and garnish with fresh parsley. Enjoy warm or cold.
